A friend taught me and it really isn't that complicated. Shuffling the deck is set so the cards mix just right and cutting the deck is predictable. I haven't done it in 15 years though. Look at time stamps 1:09 and 1:15 at the position of his left elbow. At 1:09 it is obviously rotated in, at 1:15 it is obviously rotated out and bent. After a bit of thinking, that is what I assumed he must have done. Perhaps he waved his hands at the audience and when putting them back changed it all.
