Great job of listing the steps. Things have changed since I did anything similar. However, for step 5, I always just get a 30 day temp tag. It allows a lot more leeway than a trip tag, which is supposed to be for a single one-way trip. You can get up to 3 x 30 day tags per year for a single vehicle. They will take any chassis # for the 30 day tag. I once got one for #003 on a Shelby CanAm.

Tach is not a required item in Texas, and inspectors do not check accessories that are not on their list. Safety is pretty much out the window in Texas now, so verifying your VIN / chassis #, etc. is the main deal. Horn, all lights, brakes, muffler, steering?etc.

I've driven Ferraris with the old style shifter and never noticed it being a problem. At least one gets to use some skill rather than telling the computer you (falsely) think you're in control.

Most run of the mill tire shops pay no heed to the dots, which is odd, since the shop is wasting money on weights. I've even asked a couple times and had them look at me like a dummy. Mostly Discount Tire.

Nice wheels. Looks like MV8's bead cleaning suggestion may be helpful. You may be lucky that the old tire blew up. At such high pressure, I would have worried about the old magnesium just as much.

Lighter tools? Visit a bicycle shop. Light, combination tools that pack easily. Other good stuff to be had. For those that have a wheel cover/hub cap thing, they have mini tire tools made of plastic so they won't scratch.

The symptoms don't seem to me to point to a bad fuel pump. If the pump stopped, doesn't seem like relieving all load on the engine (clutch) would result in instant restart. It should need to rebuild fuel pressure or at least have a bubble of air. Still think vibration from torque load (+ or -) is messing with a sensor. Low Oil pressure reading telling ECM to shut down? Anything telling the ECM do shut down would do it

Hunch. It has little to do with the clutch it's self. Something, like a crankshaft position sensor is getting out of line. Wobbling, or loose? The engine goes from power torque to braking torque and that still keeps the problem piece off its spot. The clutch eliminates any torque shaking for a moment so, instant restart. Something like that.

No idea what it would mean, just something easy to try.

Have you tried switching the key off then on, before using the clutch?

Anytime you get that many competing, it diminishes the "brand." Some people will just wait for more selection to come; think these cars are qquite common; can get one any day; Bids will be lower and some will be unsold. Hope all the sellers have a reserve they can live with.
